Bruschetta is the most simple and easiest appetizer to prepare and definitely pleasing the eyes due to its colorful display. Especially works the charm when you're do some small entertaining session in your own home. Most of the recipe will require meat, which means extra work. So, my version of Bruschetta is going vegetarian.
Ingredients:
1/2 loaf Baguette, sliced by angle
5 tomatoes - small cubed
1 onion - small cubed
1 bunch Chinese Parsley aka Cilantro aka Thai Parsley - chopped small to bite size
1 lemon - squeezed for the juice
Seasoning: lemon pepper, salt, sugar
How to:
1. Toast Baguette for approx 9 min at 175C - this will give you a dry and crispy base
2. In a bowl, mix tomatoes, onion, Cilantro, lemon and the seasonings until seasoning well blended, store this in the fridge until it's cold enough
3. Serving: place the sliced Baguette on the plating and just top over with the tomato mix.
Easy? :) :)....
